Tonight's Bites!

Tonight's dinner was inspired by a recipe competition for Jillfit (my personal training team). I wanted to create something that was delicious, flavorful, and clean. This creation met all of my objectives and surpassed my expectations! I couldn't wait to share with you all. Enjoy!!

Baked Tilapia with Mango Salsa
Servings: 4

Mango Salsa:

Ingredients:
  • 3 Roma tomatoes, seeded and diced
  • 1 ripe mango, peeled and diced
  • ½ cup diced green onion
  • ½ cup chopped fresh cilantro
  • 2 Tbsp freshly squeezed lime juice
  • 1 Tbsp apple cider vinegar
  • 2 cloves garlic, minced
  • ½ packet Truvia
  • ½ tsp pepper
Directions:

Combine ingredients. Let chill while preparing fish.



Tilapia:

Ingredients:

  • 1 tsp Italian seasoning
  • ¾ tsp. Paprika
  • ¾ tsp. onion powder
  • ¾ tsp garlic powder
  • ½ tsp dry mustard
  • ½ tsp cumin
  • ½ tsp pepper
  • ½ tsp basil
  • ½ cup oat bran
  • ¼ cup thinly sliced green onions
  • 2 tsp parsley
  • 1 Tbsp olive oil
  • 4 4-oz tilapia fillets



Directions:

1. Preheat the oven to 450 degrees.

2. In a small bowl combine the first eight ingredients through the basil. Sprinkle 1 tsp of the mixture on each fillet and set the remaining seasoning mixture aside.

3. Combine the oat bran, green onions, parsley, olive oil, and remaining seasoning mixture in a shallow container.

4. Dredge the seasoned fillets in the breadcrumb mixture, coating well. Shake off any excess.

5. Place the fish on a large baking coated with non-stick spray and place in the oven for 5 minutes. Flip fish over and bake for 5 minutes. Flip fish a final time and bake for an additional 5 minutes, or until fish is flaky.

6. Top with mango salsa and enjoy!




I served this with a side of asparagus!
